True Baristas was born from a family legacy in the coffee business that began 25 years ago with Café Demetrio in Coral Gables. Building on that experience and passion for coffee, we envisioned a new concept—something more modern, distinctive, and connected to the way we wanted people to experience coffee in Miami.

Inspired by the charm of 1950s European café culture, True Baristas brought that vision to life through our iconic vintage Citroën coffee trucks. Our vision was to bring that European coffee culture and atmosphere to the United States, reimagined with the energy and lifestyle of Miami. The idea was simple but different: combine the character and nostalgia of another era with gourmet specialty coffee, exceptional quality, and high standards of preparation and service.

In 2020, True Baristas officially began operations in Brickell, Miami. From there, the brand expanded through additional coffee truck locations, each carrying the same signature vintage atmosphere and creating a coffee experience that stood apart in the city.

As True Baristas evolved, so did our commitment to quality. Today, we proudly serve specialty coffee beans from Panama, one of the world’s most prestigious coffee origins, with a unique roast developed exclusively for True Baristas—giving our coffee its own distinctive identity and character.

Today, our story enters a new chapter with the opening of our True Baristas café in Brickell. The setting may have evolved from our vintage trucks to our own coffee shop, but the vision remains the same: exceptional coffee, distinctive atmosphere, and an experience with character.
